Couverture vs. Compound

Anods Cocoa produces two types of chocolate; Couverture and Compound.

Couveture chocolate is made using larger percentages of cocoa butter and does not contain additional fat or oil. In tropical countries like Sri Lanka, this causes the chocolate to melt easily making it difficult to store on standard shelves. Therefore only the four types of 100g Signature chocolates with specialized packaging and three types (dark, milk, white) of 1kg blocks are available for sale in Sri Lanka from this range at the moment. 

Alternatively, Compound chocolate is produced using a specialized fat prepared from palm kernel oil. The ease of handling and resistance to heat in comparison to couverture chocolate has made it more suitable for use in the Sri Lankan local market. While both products contain the same high quality cocoa, the compound fat base allows for smaller sized chips and buttons to be more heat resistant and therefore easily stored on shelves in Sri Lankan supermarkets and stores. A 1kg block is also available for those who prefer to use a compound than a couverture for baking.
